Madaline’s Grill and Steak House
A Spirited Kitchen
By Deborah Elvrom
As you travel
through Redmond on Highway 97, stop in at Madaline’s Grill and Steak
House for delicious entrees from a varied menu, including American,
Italian, Thai and of course, Mexican.
Owner Pablo Pena has
worked diligently to bring his restaurant dream to life. With his
training, experience and love of cooking, Pena brings atmosphere and
flavors from his hometown of Jalisco, Mexico. Many of the recipes used
at Madaline’s have derived right from his mother’s kitchen. As a young
boy, Pena would help with the cooking whenever he could.
At 14 years old, he
traveled to California, working in the fields to earn his way.
Gradually, Pena moved north to Oregon where he landed a dishwashing job
in Los Margarita’s in Portland. With an ambitious spirit, Pena was soon
cooking up a storm.
Next stop Seattle -
where he began training with chefs cooking Italian pasta dishes and Thai
food. While in Seattle, he married Beatris Adriana, daughter of a
successful restaurant owner.
Occasionally, Pena
would take a leisurely golf trip to Sunriver. On one such journey, he
spotted a building up for grabs. Wheels started turning, and soon
Madaline’s Grill was a reality. In honor of his first born child, he
bestowed her name to the restaurant as a legacy.
His wife does the
bookkeeping and her brother cooks many of the dishes. Pena is proud of
his accomplishments and greets customers with great enthusiasm. Pena and
his family are happy to be living in Redmond and wish to thank everyone
for the support shown in making their enterprise a success.
A January 2004
celebration is planned to mark the second anniversary of Madaline’s.
